Buffalo Chicken Salad Sandwich
Buffalo Chicken has to be one of the most popular flavour combinations today. I was making ordinary chicken salad sandwiches with the "dirty bird/rubber chicken/mother's little helper" I usually pick up on my Costco excursions and I thought that combination would make a delicious sandwich! I looked for a recipe for it and found lots of other applications of those flavours but not what I was looking for. So I created it - that's why I have a blog, right?! This makes yummy chicken salad sandwiches but also outstanding paninis.
Buffalo Chicken Salad Sandwich Filling
1 generous cup of chopped cooked chicken
2 tablespoons blue cheese salad dressing (I've used Litehouse and Renee's), plus more for the bread
2 tablespoons of mayonnaise
1 tablespoon of Frank's Red Hot Sauce (more if you want!)
2 tablespoons grated carrots
2-4 tablespoons chopped celery
garlic powder or garlic salt and pepper to taste
Mix all ingredients together and make sandwiches! This recipe will make 4 not-too-stuffed sandwiches.
Spread blue cheese dressing thinly on the bread and top with the chicken salad. If you are eating this cold, add some lettuce. If you are making this into a panini, top with your favourite melting cheese and grill. In our house that means Havarti or Tex-Mex blend.
